Easy Dinner

I love Sundays...

They are long and luxurious ... all our chores completed the day before 

Sundays stretch out before us in a way no other day does normally.

Having already cooked the "giant pot of beans" that I will eat from all week

I still had some great veggies on the counter to feast on:


Baked Sweet Potato - baked in the microwave on the potato setting until perfectly soft
Roasted brussel sprouts - extra virgin olive oil, sea salt and pepper - 375 degrees 15-17 min
watermelon - not shown but it was delicious!
